INGREDIENTS
Cookies

2 ½ cups gluten-free flour (we used a combo of gluten free all-purpose and pastry flour)

1 teaspoon baking powder

½ teaspoon salt

¾ cup cane sugar

¼ cup brown sugar

¾ cup unsalted butter, softened

1 teaspoon vanilla extract

2 large eggs
Icing
-
¼ cup cream cheese, softened
-
¼ cup unsalted butter, softened
-
1 teaspoon vanilla extract
-
1 ½ cups confectioners' sugar
DIRECTIONS
- Preheat the oven to 325 degrees.
- Whisk together the gluten free flours, baking powder and salt.
- Next, beat the sugars, softened butter, and vanilla in a bowl until creamy, about 3 to 4 minutes. One at a time, beat in eggs until the mixture is smooth.
- Gradually mix in flour mixture until a dough forms.
- Roll the dough into a ball and refrigerate for about an hour. It helps to put it in plastic wrap.
- Roll the dough onto a lightly floured surface and cut into desired shapes. Arrange the cookies onto a baking sheet lined with parchment paper.
- Bake for 10 minutes, or until the cookies are just starting to brown. Rotate the pans halfway through.
- Cool the cookies on a wire rack.
- While the cookies are cooling, begin preparing the icing.
- Beat the cream cheese, softened butter, and vanilla with an electric mixer. Once well combined, slowly add the confectioners' sugar.
- Spread icing on cookies and enjoy!
