Ingredients
Apples
- 2 cups diced apples
- 1 tbsp Relative Foods brown sugar
- 1 tsp cinnamon
Cake Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- 3/4 tsp salt
- 3/4 tsp ground nutmeg
- 1 1/2 tsp cinnamon
- 1 cup vegetable oil (you can substitute butter)
- 1/2 cup Relative Foods brown sugar
- 1 cup Relative Foods cane sugar
- 3 eggs
- 1 tsp vanilla
Frosting Ingredients
- 8 ounces cream cheese, softened
- 1/2 cup butter, softened
- 1 cup Relative Foods brown sugar
- 1 cup powdered sugar
- 1 1/2 tsp vanilla
- 1 tsp pumpkin pie spice
- 1/2 cups chopped walnuts (optional)
Instructions
- Combine diced apples with 1 tbsp Relative Foods brown sugar and 1 tsp cinnamon. Set aside.
- Preheat oven to 350F
- Grease three 6" (or two 9”) cake rounds
- In a medium bowl, combine flour, baking powder, spices, and salt and set aside - In a separate mixing bowl, combine vegetable oil (or butter) and sugars. Beat until well combined, about 2 minutes. Add eggs one at a time until thoroughly mixed, then add vanilla.
- Slowly fold in flour mixture
- Fold in apples
- Spread batter evenly into prepared pans and bake for 35-45 mins or until a toothpick inserted into the center comes out clean
- Place cakes on wire rack to cool for 10 minutes then turn over and out onto wire rack to cool completely
Frosting Instructions
- In a large mixing bowl beat the cream cheese, butter, sugars, vanilla and pie spice until smooth, approximately 5 minutes.
- Spread frosting between layers and over top and sides of cake.
- Gently press walnuts into frosting on top of the cake.
